An E-Creamery Treat!

E-Creamery treated the Crème de la Crème students to a sweet treat this month!  I had so much fun partnering with them to create my own flavor: "Cinnamon Cream de la Crème". Cinnamon ice cream with caramel swirls and praline pecans paired perfectly with the Salted Caramel Apple Pie for dessert!

It was a full class tonight with eight students!  I've had requests for months to feature a soup and October was the perfect month to do it.  The October menu features Autumn Sangria, Spinach & Artichoke Dip, Chicken Pot Pie Soup with Gruyere Pie Crust Dunks, and Salted Caramel Apple Pie.

You can't start a class off without a glass of wine, or in this case, Autumn Sangria! Cheers!

I had all my ingredients ready and we were ready to rock and roll!  I'm always happy to pass my ingredients around in class so you can take pictures or notes to remember which brands I use.

After whipping up the Spinach & Artichoke Dip, I portioned it in individual pretzel roll bowls and baked it in the over with a little bit of shredded cheese on top.  Divine!

Up next -- Chicken Pot Pie Soup!  Shield your eyes, we use a stick of butter!  It's a simple, delicious soup for those chilly days.  I use carrots, celery, potato, and onion in my version, but feel free to use whatever veggies you like in your Chicken Pot Pie. For this recipe, I actually use a store bought pie crust to make the pie crust dunks.  Sprinkle a little Gruyere cheese and bake in the oven to golden brown.  It's the perfect sidekick to this soup!

Now, the moment we've all been waiting for...the Salted Caramel Apple Pie!  I used a little "tv" magic to accomplish this recipe.  Because it is a couple hour process, I had a baked pie hiding in the pantry.  But, I LOVE showing my students how to make a homemade, thick pie crust that they can use for their pies at home.  It takes a little bit of love but it is so much better than the store bought crusts.
