Thunderstorms, Snow Days, and Crème Diner Faves

What do thunderstorms, snow days, and patty melts have in common?  They ALL happened during class!  It was round two of my "Crème Diner Faves" menu -- Truffled Curly Fries, French Cobb Salad, Paula's Patty Melts, and a Pistachio Palmier Milkshake.  Let's just say there were no leftovers...

But before we get to the food recap -- I was celebrating an EXTRA SPECIAL student this evening...my 200th (unique) student!  It's hard to believe that 200 wonderful people have passed through the Crème kitchen in the last year and a half.  I am truly blessed.  Shannon received an extra special binder cover and fun party cracker.

Typically, I would serve my Truffled Curly Fries alongside the Patty Melt.  But, I decided it would make the perfect snack at the beginning of class.  Twice fried, generously seasoned with freshly grated parmesan cheese/parsley/garlic, and topped off with a combination of truffle oil and truffle salt.  I use my spiralizer attachment for my KitchenAid to get this cut.

Next, I had the cutest idea for spring entertaining: a French Cobb Salad...in a Mason Jar.  You heard right!  This is also a great recipe to make ahead on Sunday for the work week.  The chicken in this recipe is incredibly versatile.  I prefer a soft boiled egg on top.  Add some avocado, prosciutto, grape tomatoes, gruyere cheese, and a homemade vinaigrette...heaven!

I love surprising my students with unfamiliar concepts or techniques.  This Palmier cookie is so simple, quick, and fancy.  They never last in my house more than 24 hours before my kids devour them all!

Moving on to Paula's Patty Melt -- I really went above and beyond in this recipe.  My version has Brioche bread, caramelized shallots, an aioli, and melted Brie cheese.  I mix my own hamburger meat into thin 3oz patties.  Simply grill to perfection.

Last, but not least...it wouldn't be a "Diner Faves" menu without a luscious milkshake!  Pistachio is one of my favorite flavors and paired with the Palmier cookie?  No brainer!  Mary even helped me out with the ice cream!
