Grilling Pizza: My Tips and Tricks

We all have our favorite pizza places (and I’m one of the lucky few to have kids who all have different ones), but what I’ve come to find is that there are very few places to beat my pizza. I think that’s one thing my kids can agree on.

Now, I’m not going to lie, ordering a pizza is WAY easier than making it yourself. But why bother settling for delivery-grade pies when you can make your own?

Here, I’ll give you a few tips for making your own pizza from home, using my favorite techniques and ingredients that I’ve found along the way!

To start off— the flour.

I think most people can agree that the crust is the most important part of the pizza, and to get a nice crust, you need the best flour on the market. In the past, I’ve just used bread flour (and you can too!) but I had stumbled upon this Caputo “Chef’s Flour” and fell in love. It’s now my number one recommendation for pizza dough (and great for other breads alike!)

My pizza dough recipe is listed at the bottom, but once you’ve got your dough ready, the pizza’s almost done!

Another rule for pizza-making I’ve never strayed from is to use only a thin layer of pizza sauce before layering your toppings. Not only will the tomato sauce overpower your toppings or sog up your crust, your toppings will slide right off!

I also always put my cheese on next. I like to think of it as being the glue to hold all your toppings down!

Next, of course, the toppings. In the last batch of pizzas I made, I used sautéed onions and mushrooms, italian sausage, pancetta, and salami. My mouth is watering even writing this out. It was the perfect combination, and I can’t wait for the next time I get to take a bite.

I also add a little cheese on top, and it’s ready for the grill!

For the longest time, I had been using a regular pizza stone on my grill, but just recently, I got my hands on a BakerStone grill-top pizza oven, and it works phenomenally! What I missed with a pizza stone is heating from the top, and this gadget does just the trick!

I just slide my pizza right on in, and flipping once halfway through, let the oven do it’s magic until the cheese is bubbling and the crust gets nice and golden brown.

Paula’s Pizza Dough

Ingredients:

3 cups Bread flour

2 tsp. Salt

1 1/2 tbsp. Sugar

1 pkg. Yeast

2 tbsp. Olive oil

1 cup Warm water

Combine the flour, salt, sugar, and yeast in a stand mixer and blend until just combined. Add the warm water and run on low. Add extra water as necessary. Slowly add olive oil until the dough becomes a ball, then blend for 15-20 s more. Replace the head of your mixer with a knead head, and knead until smooth. Pour a tbsp. of olive oil in the bottom of a large glass bowl, and transfer your dough. Keep in a warm spot to rise until the dough doubles in size, approx. 1 1/2 to 2 hours.

You are now ready to make pizza! Place your pizza stone or grill-top pizza on your grill and heat up for at least 50 min. Pile on your favorite toppings and grill your pizza until golden brown. Yum!
