Italian Herbed Ribeye Roast with Garlic Butter
Hello, friends!
This recipe was one of the many that my family and I enjoyed during our Christmas weekend on Lake Poinsett in South Dakota! The meal was requested by my Sophia who wanted it with Mac & Cheese! I’d have to say it was a match made in heaven, sided with Roasted Baby Broccoli to make the perfect family dinner!

Italian Herbed Ribeye Roast with Garlic Butter
Ingredients:
4-6 lb. Ribeye roast
4-6 cloves Garlic
6 tbsp. Butter, softened
1 1/2 tsp. Kosher salt
1/4 tsp. freshly ground black pepper
1/2 tsp. Dried basil
1/2 tsp Dried oregano
1 pinch Crushed red pepper
Preheat oven to 500 degrees. Combine all ingredients below the roast in a small bowl, then lather onto all sides of the roast. Place fat side up in a roasting pan and bake for 20 min. Drop down the heat to 325 degrees and continue to roast until desired internal temperature (below) is reached. Lightly tent with foil and let sit 20 min. before cutting and serving. Finish the slices with a sprinkling of sea salt when serving! Enjoy!
Rare: 130 degrees
Medium Rare: 140 degrees
Medium: 145 degrees
