Puff Pastry Breakfast Pizza
Hello, all breakfast lovers!
Who doesn’t love the weekends? I love LOVE lazy weekend mornings during the summer. I get to sip my coffee longer, I get to lounge in my cozies longer, and usually I have my kids sleeping longer, which means I get to whip something special up in the kitchen for them!
One of my favorites I recently featured on my Instagram page was such a hit, that I’d love to share the recipe with you! We decided to call it Puff Pastry Breakfast Pizza, which is kind of fitting since we baked all of our morning “pizza” favorites on a puff pastry sheet until golden brown! I added fluffy scrambled eggs on top! Breakfast perfection. And the best thing about it was how easy it came together!

Puff Pastry Breakfast Pizza
1 Puff pastry sheet
Breakfast sausage
Diced russet potatoes
1/2 Red bell pepper
1/2 Red onion sautéed in 2 TB butter
American cheese slices
8 Eggs
1/4 cup cream
Salt and Pepper, to taste
Set oven to 375 degrees. Bake the puff pastry just a couple minutes, so you can stack ingredients on top. In a frying pan, sautee the sausage until brown and crispy. Set aside to cool, then crumble. In the pan drippings, sautee the potatoes until softened and crispy on the outside. Sautee the veggies in the same pan. Whisk eggs cream and salt and pepper together. Pour into a skillet with 2 tbsp. melted butter and stir slowly until eggs are scrambled but super soft still— I promise they will finish in the oven! Stack all of your ingredients onto the puff pastry, including the mozzarella, then put back into the oven until warmed all the way through, and the cheese is gooey. Garnish with freshly chopped chives. Enjoy!
