Paula’s Pumpkin Bundt
Ingredients:
2 cups Sugar
1 15 oz. can Pumpkin
1 cup Vegetable oil
4 Eggs
2/3 cup Water
3 1/2 cup Flour
2 tsp. Cinnamon
1 1/2 tsp. Salt
2 tsp. Baking soda
Preheat oven 375F. Combine the sugar, pumpkin, oil, eggs, and water in a stand mixer. Mix until combined. In a separate bowl, combine the flour, cinnamon, salt, and baking soda. Add to wet ingredients and mix until combined. Prep a bundt tin (or bread pan!) with cooking spray, then pour in the batter. Bake for 65-70 min., or until the bundt passes the poke test. Make sure to let cool before removing from the pan, and serve by the slice! Enjoy!
