Spicy Garlicky Pork and Green Chili Stew
Let’s face it. I love stew. I love anything soup stew or chili— comfort in a bowl. Of course, in the winter, it warms your belly and fills your soul! But now spring is upon us and honestly, I feel like it’s good any time of the year! So, bring. It. On.
This time I had a little help in my kitchen— my Mom. Growing up, she always had me in the kitchen with her so it was fun to prep and chop and chat away. Nothing better!

Spicy Garlicky Pork and Green Chili Stew
Ingredients:
2-3 lbs. Pork shoulder, cubed
1 tsp. Salt
1/2 tsp. Pepper
1/2 Red onion, diced
2-3 Jalapeños diced
4-5 cloves Garlic, minced
1 tsp. Cumin
1 tsp. Oregano
2 tsp. Chipotle chili powder
1/2 jar Green chili sauce
1/2 jar Salsa (your favorite kind!)
1 cup Chicken broth
1 tbsp. Tomato paste
1 can Black beans, rinsed
Season the cubed pork shoulder with salt and pepper. Transfer to a large soup pot over medium heat and cook through. Add onion and jalapeños, and continue cooking until softened. Add garlic (and lots of it!), the mix in the spices. Add salsa, green chili sauce, and tomato paste. Add chicken broth and combine all the ingredients together. Bring the heat down to medium low, cover, and simmer, stirring occasionally for 45-60 minutes. Serve with cheese and sour cream and fresh cilantro if desired. Delicious!
