Buttermilk Waffles... in a pinch!
Happy Saturday and holy humidity... this is probably NOT the day to have your oven on, am I right?!?
To me, this is the perfect day for breakfast for dinner! Just ask my nephew Owen. He’s celebrating his “sweet 16” and is a super fan of breakfast food. So, Auntie is on duty for some amazing waffles! Hey, I aim to please.
Something everyone usually has in their pantry is pancake mix. I wondered if I could make a shortcut version of a buttermilk waffle with pancake mix. Could this possibly be done? I was looking for a sturdy waffle. One that can hold copious amounts of butter and syrup, of course. But pancake mix is for more light and fluffy cakes... so, after experimenting on a couple of batches here is what I came up with... add in some additional cornstarch and maybe an egg or too, to help, and a dollop of barley malted flour for depth of flavor. Cooking oil gave it a great consistency and helped with getting out of the waffle iron (don’t forget to use cooking spray too!)
And there you have it! The batter does do better after sitting a few minutes, and may seem not as thick as your typical waffle batter but trust me, you will not be disappointed!
And it’s perfect for make ahead, as I am doing! Just cool on a cookie sheet and crisp up in a toaster or a 375 degree oven. (As they sit, they will not stay as crisp!) Slather on your favorite toppings and enjoy!

Buttermilk Waffles
Ingredients:
1 cup Pancake mix
1 tbsp. Malt powder
2 tbsp. Corn starch
1/2 cup Buttermilk
1/3 cup Water
1 tbsp. Vegetable oil
1 egg
Prep your waffle iron or press as instructed. Whisk together the pancake mix, malt powder, and corn starch in a large bowl. In a separate bowl, combine the buttermilk, water, vegetable oil, and egg. Combine the wet and dry mix by slowly incorporating the wet mix into the dry bowl. Let batter sit for five min. Pour into your waffle maker and cook as instructed, or until its a deep dark golden brown. Serve with plenty of butter and syrup and enjoy!
