Mini Bean and Cheese Quesadillas

Ingredients:
1 can refried beans
1/4 cup minced onion
1 garlic clove minced
2 tsp olive oil
1/4 tsp chili powder
Salt and pepper to taste

Equal amounts cheddar cheese and jack cheese
1 small can chopped hatch chilies

2/3 cup Daisy sour cream
1/4 cup El Pato hot tomato sauce

Directions:
Sauté the onion and garlic in the olive oil until soft.
Add your can of refried beans plus 1/4 cup water.
Mix well and heat through.
Add the chili powder and salt and pepper to taste.
Simmer 10 minutes and then set aside.

Place small “street style” sized flour tortillas on a flat surface.
Spread a layer of your bean mixture.
Add you green chilies on top!
Mound lots of your shredded cheese on top of the bean and chili mixture.
Place another tortilla on top.

Butter a skillet over medium to medium high heat.
Fry each side of the quesadilla until golden brown on each side.

Combine your sour cream and hot tomato sauce together.
Drizzle over the top of each quesadilla.
Garnish with sliced jalapeños or Serrano  and serve!
