Garlic Confit Aioli
Ingredients:
1 Cup Peeled Garlic Cloves
Olive Oil (to cover)
2 Sprigs of Thyme
1/2 tsp of Kosher Salt
Directions:
Simmer oil with the garlic cloves, thyme and salt in a small saucepan over medium low heat.
Do not let oil come to a boil.
Cook for approximately 45 minutes (or until tender with a pale/golden color).
Allow it to cool to room temperature.
You can store in a jar / airtight container in the fridge for 2-3 weeks.
When reusing, bring back up to room temperature.
Use cloves to flavor soups, sauces, pasta, sandwiches, or even mashed potatoes!
It’s also lovely as a spread on crusty bread.
Garlic infused oil can be used in salad dressings and marinades… or event to dunk bread in.
