Bacon. Have We Gotten Your Attention Yet?
Can we talk a moment about what bacon means to my family?
I recently had a conversation with my kids about whether or not we could live without meat. A nice juicy steak? Perhaps. Chicken? We were on the fence. But bacon, I asked? Definitely not.
Bacon to me is in a food group of its own. Bacon is the star in a BLT. Bacon makes your baked beans scream with delight. And how about bacon and eggs? A match made in heaven.
The Crème Kitchen has used bacon in a multitude of recipes. From Cuban Black Beans, my Mexican Haystacks, and even my Braised Greens (cough cough, you can find those amazing recipes here.)
To ask my children on any given day, especially if I am entertaining family or friends, what snack or appetizer I could make, they will usually say “Mom’s poppers”. I get the most amazing jalapeños to stuff with a creamy combination of cream cheese and pepper jack cheese with a drizzle of BBQ over the top.
The combination will make you agree that a life without bacon is a life without oxygen.

BBQ Stuffed Jalapeños
These little guys will make you a bacon lover! This recipe serves a hungry family but can easily be cut in half. I like to keep the stems on. Filling stays put better and it’s a great little handle to help get these right into your mouth! Enjoy!
Ingredients:
8 oz. Cream cheese, softened
5 oz. Pepper jack cheese, shredded
2 Green onions, chopped
2 tsp. Dry ranch seasoning
1-2 Jalapeños, seeded and minced (depending on how much heat you like!)
6 oz. Bacon, chopped and fried crisp
10-12 Large jalapeños, halved and seeded (stems on)
Your favorite BBQ sauce, to drizzle
Set oven to 325°F . Combine the cream cheese, cheese, ranch seasoning, minced jalapeño and the bacon in a medium-sized bowl. Fill each pepper with the cheese mixture. Line a cookie sheet with parchment or foil and lay the peppers side by side on the cookie sheet. Drizzle generously with your favorite BBQ sauce. Put in your oven and bake for 25-35 min. or until tender and gooey. Serve at once!
