Italian Sausage and Pepper Subs
Feeling hungry again?
After we toured our home in the snow, hats and mittens on, we headed back to my current kitchen to warm up! And what better way to warm up than with some Italian Sausage and Pepper Subs? Squishy white hoagies, buttered with a garlic herb spread, and topped with a quick and easy way to prepare savory sausage and peppers. Spread some mozzarella and Parmesan and put under the broiler briefly, and with one bite you will be transported to sausage heaven. I’m not kidding. Enjoy!

Italian Sausage and Pepper Subs
Ingredients:
16 oz. Spicy Italian sausage
1 tbsp. Olive oil
1 medium Yellow onion, sliced
1 Green bell pepper, sliced
1 Red bell pepper, sliced
1 clove Garlic, minced
1 pinch dried Basil
1 pinch Crushed red pepper
1 jar Rao’s marinara sauce
Soft and long Hoagie buns, split in half
Butter
Garlic powder
Dried basil
Dried oregano
8 oz. Mozzarella, shredded
4 oz. Parmesan, shredded
Sauté the sausage in the olive oil until browned (they don’t have to be all the way done!) In the same pan, sauté the onion and bell peppers until softened. Add garlic, basil, and red pepper. Add sausages back in and pour the marinara over top. Cover and simmer 15-20 min.
Generously butter the hoagie buns. Sprinkle lightly with garlic powder, dried basil, and dried oregano. Toast under the boiler.
To assemble the sandwiches, in a baking dish, place sausages on the toasted bun and top with a generous amount of peppers, onions, and sauce. Combine the mozzarella and parmesan and place on top. Place under broiler until cheese is melted and serve immediately, with extra sauce on the side to dip!
