Last Minute Gourmet Tomato Soup

It’s been a crazy week, and I’d be lying if I said I didn’t come up with this recipe… literally tonight. But it turned out so good so why not pass it on??
It’s a cold and dreary night too, so I looked in my pantry for some soup ingredients! I got my hands on some Cambell’s tomato soup and I thought, “How can I make canned soup seem more gourmet?” A couple flavorful ingredients later, and my kids couldn’t tell it came from an aluminum can!

Last Minute Gourmet Tomato Soup
Ingredients:
1 tbsp. Olive oil
2 cloves Garlic, minced
1 tsp. Dried basil
1/2 tsp. Salt
28 oz. can Crushed tomatoes
1/2 can chicken broth
2 cans Cambell’s Tomato Soup
1/2 cup Heavy whipping cream
In a medium pot over medium heat, lightly brown the garlic in the olive oil. Stir in the basil and salt. Add in the 28 oz. can of crushed tomatoes, then fill the leftover tomato can up halfway with chicken broth, and add that in too. Then, add in the tomato soup. Stir altogether, then let simmer for 15-20 min., partially covered with a lid. Once done, add in the cream, and let simmer 5 min. more before serving. Garnish with basil, olive oil, and parmesan! Delicious!
