Crispy Cajun Roasted Potatoes

Happy Saturday, once again!

We grilled some steak a few days ago when the weather was just perfect! As an accompaniment to our main course, I decided to toast some baby potatoes with a slight and “spicy” spin! They came out crispy and delicious. Needless to say, there were no leftovers. The key is to make sure you are not overloading your cookie sheet— otherwise they will steam! So just get out that extra sheet pan and do a little extra washing that day. It will be SO worth it!

Hope you all enjoy!

Crispy Cajun Roasted Potatoes

Ingredients:

4-5 cups Baby potatoes (red and yellow), halved or quartered

1 tbsp. Olive oil

1 tbsp. Cooking oil

1 tbsp. Butter, melted

1/2 tsp. Garlic powder

1/2 tsp. Slap Ya Mama seasoning (or any other cajun seasoning!)

1/2 tsp. Smoked paprika

1 tsp. Salt

1/4 tsp. Freshly ground black pepper

2 cloves Garlic, minced

2 tbsp. Kraft parmesan

Prep your oven to 375F. Place your potatoes in a large bowl and drizzle with the oil and melted butter. Add in the fresh garlic and spices and stir until completely covered evenly. The combination of the garlic powder and fresh garlic is a double win!! Spread out onto two cookie sheets, leaving some space around potatoes to crisp up. Place in the hot oven, turning two times until desired crispness is achieved! (usually around 30- 40 min.)
