Shrimp Havarti

Ingredients:

1/4 cup Olive oil

1/3 cup Butter, unsalted

3-4 cloves Garlic, minced

1 lb. Shrimp, raw and deveined

1/4 cup White wine

1 handful Fresh parsley, finely chopped

Sliced Havarti cheese, to top

Colby Jack cheese, shredded

1 French baguette

Olive oil, to drizzle

Parmesan cheese, to top

Set oven to 375F. Melt the olive oil and butter in a frying pan over medium heat. Add the garlic and fry until fragrant. Fry the shrimp until halfway cooked through. Add the wine and reduce for a couple minutes. Take the pan off heat to remove the shrimp and set aside. Reduce the leftover sauce, still on medium heat, for just 5 min. or so. In a shallow baking dish (I used a pie dish), put your cooled shrimp on the bottom layer and pour the reduced sauce over top. Cover with Havarti cheese— put as much on as you want! And follow with the Colby Jack. Bake for 7 minutes. Then, turn the oven to broil and finish off the shrimp for just a couple minutes, or until the cheese is bubbling and gooey.

For the baguette, slice diagonally and place on a baking sheet. Brush or drizzle a thin layer of olive oil over top, then sprinkle with parmesan. Place under broiler until golden brown and crispy, make sure they don’t burn!

Once out of the oven, sprinkle the top of your shrimp with parsley before serving. Be sure to dip the baguette in the sauce— so so delicious!
