Pesto Focaccia Italian Sub
Hello, once again, everyone!
You all know how much I love Costco, right? Well, I was wandering around the bakery the other day (eyeing those amazing mini chocolate chip cookies— yes I resisted, I had to) when I came across a new item. Pesto focaccia. Now, I am a super fan of bread— and an even bigger fan of focaccia. But to put the two of these things together was mind blowing! I had to buy, so I did.
Needless to say, we could eat this bread all on its own. Dip it in some olive oil or just take it apart one hunk at a time. But I wanted to elevate it a bit, so why not make a monster of a sandwich for the family right??
It was a hit. And then it was gone.

Pesto Focaccia Italian Sub
Ingredients:
One loaf Pesto focaccia
Mortadella
Sopressata salami
Deli roasted turkey
Deli black Forest ham
Deli Sliced cheddar
Iceberg lettuce, shredded
Roma tomatoes, sliced
White onion, sliced and soaked in ice water (takes out the bite!)
Hellman’s mayonaise
Italian red wine vinaigrette (Recipe below!)
Maldon sea salt flakes (optional)
Slice the focaccia horizontally and place on baking sheet. Bake under broil until golden brown. Remove and cool. Start by layering on the bottom half all your meats. Then add your cheese over. Top with the lettuce, tomato, and then the sliced onion. Drizzle as much of the vinaigrette over the top as you like, and then sprinkle with some Maldon Sea Salt flakes. I promise you won’t regret it if you try it!
On your top half of the focaccia, spread the mayo over. I like a lot! Then, sandwich everything together! You can eat right away or wrap up in Saran Wrap and put in fridge until ready to slice up and serve. Enjoy!
Italian Red Wine Vinaigrette
Ingredients:
1/4 cup Red wine vinegar
1/3 cup Olive oil
2 tsp. Honey
2 cloves Garlic, minced
1/2 tsp. Kosher salt
1/4 tsp. Black pepper
1/4-1/2 tsp. Oregano
Put all ingredients in a mason jar. Screw the lid on and shake! Enjoy!
