Kettle Chips with Blue Cheese Drizzle

Birthdays are a big deal over here. Like, huge. Food, family, and usually something fun to do!

Recently, one of my five had a birthday—my Sophia. What was her request for dinner you ask? A good old fashioned cheeseburger. Only melted American cheese on top will do. Sautéed onion and jalapeño draped over the melted cheese And a grilled soft and squishy bun. Skip the butter and spread it with some Hellman’s mayo and put it upside down on a skillet until golden brown. I promise you won’t regret it.

She also had a very special second request:

Blue. Cheese. Chips.

What are these, you ask?? Kettle chips drizzled in a creamy cheesy sauce topped with blue cheese crumbles and chopped chives. Amazing? Yes. And even if you have people who are not the biggest blue cheese fans (yes I’m talking to you Ava!) they will love this recipe. Of course, you can always substitute with sharp cheddar but just give this a try. You won’t be disappointed!

I fried thinly sliced potatoes twice (1st fry in 300 degree oil and 2nd fry in 350-360 degree oil, cooling potatoes in between) for a crispy and addictive chip—seasoning with only salt and pepper. But as always, if you need a shortcut just go out and buy your favorite Kettle Chip1

Now here goes... prepare to get your fingers messy and enjoy! Crunch away!

Enjoy!!

Kettle Chips with Blue Cheese Drizzle

Ingredients:

Kettle chips

8 oz. Cream cheese

4 tbsp. Butter

1/2 tsp. Garlic powder

1 cup Heavy cream

1/2 cup Whole milk

3/4 cup Parmesan cheese

2 oz. of your favorite Blue cheese

Layer your homemade or store boughten kettle chips on a large cookie sheet. You can warm in a 350 degree oven for a few minutes right before you top them with your blue cheese drizzle!

For the blue cheese drizzle, add all ingredients into a saucepan and over medium low heat melt until a smooth and creamy. Then, just pour overtop your chips! So easy. Sprinkle with crumbled blue cheese and chopped chives. Serve immediately with lots of napkins! Enjoy!
