Lake House Green Beans with Blistered Cherry Tomatoes

Good evening once again, my foodies!

Last weekend, we made a trip to our lake house in South Dakota on Lake Poinsett, and had a wonderful time up in the north!

The snow and coziness of our cottage had me putting some creamy chicken in the crockpot. As a side, I decided to use what we had in our pantry to make the most amazing green beans. And from now on, we shall call them “Lake House Green Beans”! With tomatoes and shallots, smothered with a brown butter… they were to die for.

Lake House Green Beans with Blistered Cherry Tomatoes

Ingredients: 

1 lb. French style green beans, trimmed and washed

5 Shallots, sliced

1 cup Cherry tomatoes, halved

3 tbsp. Butter

1-2 tsp. Rice vinegar

Salt and pepper, to season

Brown the butter to a nice golden brown in a skillet. Add the shallots. Cook over medium-high heat until brown and crispy on the edges. Add the tomatoes and cook until blistered, then add the green beans. Stir to combine. Add vinegar and seasoning. Turn heat down to low and cover until beans are tender and crisp, 15-20 min. Serve as a side to your now elevated dinner! Enjoy!
