Doritos Chopped Salad

Hello, once again!

We recently visited our lake house once again for the holiday— it was such a nice change of view! While of course we had a lot to drink, we also filled our days eating, especially before boating everyday! This meant I had to pull out all the stops for lunch, and this was one of the best meals we had over the long weekend!

Not only is it delicious, you can make part of this salad ahead of time and then assemble when ready to eat. Colorful, flavorful, and you can add any additional veggies or toppings you want! Sour cream, guacamole, jalapeños, extra sautéed veggies, cilantro, the possibilities are endless!

Doritos Chopped Salad

Ingredients:

1 1/2 lbs. Ground beef

3 Garlic cloves, minced

1/2 Onion, diced

1 Bell pepper, diced

8-10 oz. Catalina salad dressing

8 oz. Cheddar cheese, shredded

1 cup Cherry tomatoes, chopped

2 heads Romaine, washed and chopped 

Nacho cheese Doritos, crushed 

In a large frying pan over medium heat, sauté the ground beef until almost cooked through, then add the garlic, onion, and bell pepper. Season with salt and pepper. Cook until veggies are nice and tender. Set aside to cool.

In a big serving bowl add to the lettuce, dressing tomatoes and cheese. Can keep at fridge at this point. Crush Doritos and add right before serving. Serve extra dressing and Doritos on the side! Enjoy!
