Lemon Miso Roasted Brussels Sprouts

Happy May to all my Creme foodies!

This past week has been somewhat of a struggle, as my kitchen days have been a little slower because of a much needed knee surgery. While I am on the mend, that does not mean good food is still not a priority!

And veggies always seem to find a way to my heart— especially Brussels. I can make these into a salad, a main dish, or roasted 100 ways. But one of my favorite ways has a nice little Asian “spin” on it with some white miso paste and fresh lemon. Delicious!

The key is roasting at a high temperature to get them nice and crispy, and then tossing in a reduced lemony creamy dreamy miso sauce— and that’s it! Serve it on a plate with a grilled fish or chicken, and your tastebuds will be transported.

And to tell you the truth, after a serving of these amazing Brussels sprouts, I feel like I could run a mile. But don’t tell my doctor 😂

Lemon Miso Roasted Brussels Sprouts

Ingredients:

1 lb. Brussels sprouts, halved

Olive oil

Salt

Pepper

1 tbsp. Miso paste

2 tbsp. Lemon juice

1/2 Lemon, zested

1 tbsp. Honey

1 clove Garlic, smashed


Set oven to 425 F. Roast the brussels sprouts on a baking sheet with a healthy drizzle of olive oil, salt, and pepper until golden brown and with crispy edges. While they bake, in a sauce pan over medium-low heat, simmer together the miso, lemon, honey, and garlic. Remove once combined and thickened just a bit. Once the brussels sprouts are out of the oven, toss in the miso and lemon sauce and serve immediately! Absolutely delicious!
