Maya’s Fried Eggs in Chili Oil

Hello, once again!

If you’ve been to my classes in the past, you know how hard I’ve tried (and still try!) to get my kids to work in the kitchen with me or on their own! My youngest daughter, Maya, is more and more making her own lunch or helping me prep for dinner, so I had to feature her latest creation! She’s always experimenting with my asian condiments and seasonings for her ramen, and now tried her hand at breakfast! She made this fried chili egg and I HAD to get my phone out for pictures! And simply cooking the egg in chili oil rather than cooking oil… incredible. She’s hired!

The chili oil and furikake rice seasoning can be bought at your local asian or international market, and you may want to take a trip there after you see this recipe!

Maya’s Fried Eggs in Chili Oil

Ingredients:

2 eggs

1 tbsp. Chili oil

1 1/2 cup White rice, cooked

Furikake, to top

Warm up a small frying pan over medium heat. Add in the chili oil, and once brought up to a frying temp, drop in each egg whole. Fry, covering with a lid as needed to let the top of the egg cook, until golden brown and crispy on the edges. Warm up rice in a small dish. Lay the eggs gently over the top, season with the furikake, and enjoy!
