Delicious Crockpot Roast
Ingredients:
4-5 lb. Beef Chuck Roasts (I used 2 2 lb. roasts)
Salt
Fresh ground pepper
Granulated garlic
2 tbsp. Olive oil
2 tbsp. Butter
2 lbs. Carrots, peeled
1 Red onion
6 cloves Garlic, peeled
2 rounded tbsp. Better than Bouillon concentrated beef stock
1 cup Water
1 handful Fresh thyme
1 24 oz. bag White baby potatoes
1 24 oz. bag Colored baby potatoes, washed
1/3 cup Chicken broth
2 tbsp. Butter
1/4 cup Fresh chives, chopped
2 tbsp. Flour
2 tbsp. Butter
In a shallow frying pan on medium heat, melt together about a tablespoon or two of butter and olive oil. Season one side of your beef with equal parts of salt, pepper, and granulated garlic. Place the seasoned side down in the pan and season the other side. Sear both sides until a nice golden brown.
Set your crockpot on high. Cut carrots into thirds, making sure they are about even in size. Cut the red onion into eight pieces. Scatter these vegetables and the garlic in the bottom of the crockpot. Place the chuck on top of the vegetables.
Mix the beef stock in the cup of water, and pour over your crockpot contents. Top with fresh thyme. Let cook in the crockpot for about 4 hours on high, or until the chuck is fall-apart tender.
Place the potatoes in the same pan used for the chuck on medium heat and cover with a lid for 8 minutes, tossing every once in a while. After 8 minutes, add the chicken broth to the potatoes, and cover and toss until fork tender, or about 10 minutes. Dot with butter, and sprinkle with chives. Season with salt and pepper, cover and toss one more time. Serve with the roast and vegetables.
Transfer your chuck to a pan and cover with foil. To make your gravy, mix butter and flour until completely incorporated, and little by little, whisk into one side of the crockpot until incorporated. Stir all contents together, and season with salt and pepper. Serve with the chuck and potatoes. Enjoy!
