The Dog Days Grilled Potato Packet

Happy Saturday, everyone!

If I can go a couple days without my children asking for potatoes for dinner (I’ve recently been on a cauliflower-as-a-healthy-replacement kick), I’d be a lucky gal. However, I did oblige them this once with a quick and easy side to a ribeye dinner that I recently made.

I always try to be a little easier on myself, so any recipe that I can just put all together and throw into the oven or on the grill lickety-split is right up my alley (especially with this heat!). These potatoes are no exception to that. Cheese meets fresh herbs, bundled up along with everyone’s favorite starchy, tuberous crop. Delcious! Hope you enjoy the recipe!

The Dog Days Grilled Potato Packet


Ingredients:

3 cups Potatoes, diced

1 tbsp. Olive oil 

3 tbsp. Butter, cubed

2 Garlic cloves, grated

1/3 cup Parmesan, grated

Fresh oregano 

Salt and pepper

Turn your grill onto medium heat. Toss the diced potatoes on to foil and drizzle with olive oil. Sprinkle with salt, pepper, and Parmesan. Next, spread the butter cubes over, and lay fresh oregano on top. Close the foil tightly and place onto the grill for approximately 15 min., flipping once halfway through. Once done, remove from the grill and let sit closed for 5 min. before serving. Enjoy!
