Hearty Barbecue Chicken Soup
Hello to all my Creme foodie friends!
I know being in your homes and cooking more than usual may have you feeling a little uninspired. I have to say— I love the challenge of bringing new and fun recipe ideas to you! My kids and I have been laying low at our lake house on Lake Poinsett the last two weeks. Being out here we are isolated, which is great under the circumstances. However there is not much for groceries or stores close by. This mean I get to look inside my fridge and pantry and get creative!
Some of the things I always have on hand here is the pulled chicken (or pork) from Costco. As you know. I have posted about our lake house nachos with this amazing pre-prepped favorite! Another thing I always have on hand are beans. Chili beans, to be exact. And one of our favorite condiments-being bbq. With that in mind I spotted these favorites-gathered up my crockpot-and made a go at it. BBQ chicken chili.

Hearty Barbecue Chicken Soup
Ingredients:
1 package Costco’s smoked pulled chicken
1 Red bell pepper, chopped
1 Jalapeño, minced
1/2 Onion, chopped
3 Garlic cloves, minced
1/2 jar Hatch chilies, chopped
1 tsp. Cumin
2 tbsp. Dark brown sugar
1 tsp. Famous Dave’s rib rub
1 1/2 tsp. Chili powder
2 cans Chicken broth
1 large can Chili beans with chili
1- 1 1/2 cups BBQ sauce, depending on your taste!
Combine all ingredients in a large crockpot and keep on high and covered for 4-5 hours, or low for 6-8 hours. Serve with lots of grated cheddar cheese and tortilla chips on the side!
