Hello to all my Creme foodie friends! I know being in your homes and cooking more than usual may have you feeling a little uninspired. I have to say— I love the challenge of bringing new and fun recipe ideas to you! My kids and I have been laying low at our lake house on Lake Poinsett the last two weeks. Being out here we are isolated, which is great under the circumstances. However there is not much for groceries or stores close by. This mean I get to look inside my fridge and pantry and get creative!

Paula's Magical Mushrooms
These mushrooms truly are magical. We use them for everything: whether we are topping a grilled burger, throwing them in some amazing pasta Alfredo, or even eating them with some toasted bruschetta! (Top secret idea— spread some goat cheese on your bruschetta first and then spoon these mushrooms over the top. Mmmm...magical, am I right?!?) And to top it all off, they are just so easy. The snow and coziness of our cottage had me putting some creamy chicken in the crockpot. As a side, I decided to use what we had in our pantry to make the most amazing green beans. And from now on, we shall call them “Lake House Green Beans”! With tomatoes and shallots, smothered with a brown butter… they were to die for.

My Next Best: Creamy Greek Tzatziki
I made the most amazing “gyros” with leftover ribeye last night. No one could get enough of this aromatic and savory creation! We were immediately transported to the Greek islands. (Which luckily helped being in all this snow sleet and cold!) But there was another ingredient in this amazing pita wrap that it just wouldn’t be complete without. It was homemade tzatziki. Creamy yogurt and sour cream with a touch of lemon and dill. More please! The cucumbers were a snap to shred and the dill with the mint were a match made in heaven. Everything came together beautifully.
Tex-Mex Cheesy Enchilada Bake
Tonight, we feast on enchiladas! We've had such a great time coming up with easy family dinners lately, and that doesn't stop here! And using spices and ingredients you can find in your own pantry, anyone can be a genuine tex-mex chef! And who doesn't LOVE cheese??
Last Minute Gourmet Tomato Soup
Good evening, everyone! It’s been a crazy week, and I’d be lying if I said I didn’t come up with this recipe… literally tonight. But it turned out so good so why not pass it on?? It’s a cold and dreary night too, so I looked in my pantry for some soup ingredients! I got my hands on some Cambell’s tomato soup and I thought, “How can I make canned soup seem more gourmet?” A couple flavorful ingredients later, and my kids couldn’t tell it came from an aluminum can!

We went to the back of the fridge for this one, but it turned out fabulous! Today, we made pizza pockets with some puff pastry we had on hand, and paired it with a super easy marinara dipping sauce! How to Make your Cuban Sandwich Scream "WOW"
Hello foodies! I find myself once again wanting to share another quick and easy family favorite recipe. (I’m nothing but a giver, as you all know). A few years ago, I purchased a couple panini presses for a party and we use them every chance we get. We love sandwiches. We love cheese. And to press amazing ingredients together to create a winning combination with these two things just makes all of us happy. And, of course, knowing how I like to shake things up a bit, I added a couple of twists to a traditional Cuban sandwich of my own. I switched out the bread and added some bacon. And provolone cheese instead of Swiss? Why not!
