Birthdays are a big deal over here. Like, huge. Food, family, and usually something fun to do! Recently, one of my five had a birthday—my Sophia. What was her request for dinner you ask? A good old fashioned cheeseburger. Only melted American cheese on top will do. Sautéed onion and jalapeño draped over the melted cheese And a grilled soft and squishy bun. Skip the butter and spread it with some Hellman’s mayo and put it upside down on a skillet until golden brown. I promise you won’t regret it.

There was a time when anything buffalo chicken was the epitome of a “food craze”. You really could buffalo anything! Buffalo chicken soup, buffalo chicken salad, and even buffalo-ed cauliflower! The craze has calmed down a bit and perhaps has been replaced with Nashville Hot (which is also amazing), but one dish that has remained tried and true, especially in this family, is the dip. Paula's Magical Mushrooms
These mushrooms truly are magical. We use them for everything: whether we are topping a grilled burger, throwing them in some amazing pasta Alfredo, or even eating them with some toasted bruschetta! (Top secret idea— spread some goat cheese on your bruschetta first and then spoon these mushrooms over the top. Mmmm...magical, am I right?!?) And to top it all off, they are just so easy. Good evening once again, my foodies! Last weekend, we made a trip to our lake house in South Dakota on Lake Poinsett, and had a wonderful time up in the north! The snow and coziness of our cottage had me putting some creamy chicken in the crockpot. As a side, I decided to use what we had in our pantry to make the most amazing green beans. And from now on, we shall call them “Lake House Green Beans”! With tomatoes and shallots, smothered with a brown butter… they were to die for.

My Next Best: Creamy Greek Tzatziki
I made the most amazing “gyros” with leftover ribeye last night. No one could get enough of this aromatic and savory creation! We were immediately transported to the Greek islands. (Which luckily helped being in all this snow sleet and cold!) But there was another ingredient in this amazing pita wrap that it just wouldn’t be complete without. It was homemade tzatziki. Creamy yogurt and sour cream with a touch of lemon and dill. More please! The cucumbers were a snap to shred and the dill with the mint were a match made in heaven. Everything came together beautifully.
Last Minute Gourmet Tomato Soup
Good evening, everyone! It’s been a crazy week, and I’d be lying if I said I didn’t come up with this recipe… literally tonight. But it turned out so good so why not pass it on?? It’s a cold and dreary night too, so I looked in my pantry for some soup ingredients! I got my hands on some Cambell’s tomato soup and I thought, “How can I make canned soup seem more gourmet?” A couple flavorful ingredients later, and my kids couldn’t tell it came from an aluminum can!
